PLG Cooks: Peach Pie Pops + Honey Caramel Sauce


Peach season. What could be better? Pie, cobbler, I want it ALL. One of my all time favorite summer traditions was always to visit the fresh peach pie stands in Brigham City, Utah, a place near where I grew up. The peaches there are insane and the temperature is always perfect when the sun is going down at the foot of the mountains and the whole thing is magical. Now that I live in Pennsylvania there are plenty of places to get great peaches but I have to do my best to recreate the summer magic I loved in Utah while I'm far away.

So, today I sharing a peach pie recipe with a twist, peach pie dixie cup pops! These combine all the best parts of peach pie and ice cream with the added deliciousness of rich honey caramel sauce. You'll love making them, and you'll really love eating them.



Peach Pie Dixie Cup Pops with Honey Caramel Sauce
(yields approx. 8-10 5 oz. cups)

Ingredients: 



Directions: 
  
 Set out ice cream to soften until easily mixable. Stir in chopped peaches and return to freezer until fully frozen. 

Mix together honey, butter and sugar in saucepan. Turn on medium-high heat while stirring constantly. Bring the mixture to a rolling bubbling boil for 2 minutes while continuing to stir constantly. Add condensed milk and mix well, keeping the stirring and heat constant until completely mixed through. Let cool to room temperature before adding to ice cream. 

Layer graham cracker crumbs, caramel and ice cream in cups. Spoon graham cracker crumbs, caramel sauce, and ice cream until cups are halfway full, then repeat. Top with another spoonful of graham cracker crumbs and insert popsicle sticks. Cover each cup individually with foil and freeze until solid or overnight. 

When you are ready to eat, remove from freezer, cut a slit in the top of the cup then carefully tear the remaining cup from the popsicle and ENJOY!
