So listen, friends. I've tried making cake balls. I've tried making the fancy chocolate-dipped truffles pinterest tells me to make out of nutella, or pumpkin, or red velvet cake mix. They are not easy. They never look pretty. They dirty all my dishes and stress me out. It's like, I'd rather just buy a bag of Snickers and call it a day, ya know? However, I have a secret weapon that makes me appear like a fancy treat-maker that I learned to make a couple of years ago when I lived in Brazil while my husband was an intern in Sao Paulo. They are called brigadeiro, and they are the MOST scrumptious truffle-y treat.
And, not only are they delish, they are made of a handful of ingredients that you probably have in your pantry right now, they require you to dirty minimal pans, and they are literally full-proof to make. Not pinterest full-proof, either, the real kind of brownies-from-a-box fool-proof. Along with that, they are rich, gooey, chocolately balls of yum that you could whip up for your lover on V-day and he or she will surely think you spent hours in the kitchen trying to bake up their affections.
Make. These. Ya'll. They are beyond.
Brigadeiro (Brazilian Truffles)
1 can of sweetened condensed milk
1 tbsp. Butter
3/4 c. NesQuik powder
1/4 c. Cocoa
Sprinkles
Combine all ingredients (except sprinkles) in a saucepan over medium heat, stirring constantly. Cook the mixture until it thickens enough to show the pan bottom during stirring (about 10 minutes). Pour into a greased dish and let cool to room temperature (or chill a few minutes in the fridge). Grease your hands with butter and take small amounts of candy and form into 1 1/2 inch balls. Roll the balls into sprinkles to decorate (my fav and most authentic are chocolate sprinkles!).
